Ingredients
  

  • 2 cups Lentils
  • 1 Large Onion chopped
  • 2 Carrots chopped
  • 3 cloves Garlic minced
  • 1 tsp Turmeric
  • 1 tsp Cumin
  • Salt to taste
  • 4 cups Vegetable Broth
  • 2 tbsp Olive Oil extra virgin
  • 1 Loaf Whole Grain Bread

Instructions
 

  • Heat the olive oil in a large pot. Add the chopped onions, carrots, and minced garlic. Sauté until the onions turn translucent.
  • Add the lentils, turmeric, cumin, and salt to the pot. Stir well to combine with the sautéed vegetables.
  • Pour in the vegetable broth. Bring the soup to a boil. Reduce heat, cover the pot and let it simmer for about 40 minutes, or until the lentils are tender.
  • While the soup is simmering, slice your loaf of whole grain bread.
